mushrooms

mushrooms become awkward and interesting once Astrina files them under Canned vegetables, because that pushes a very ordinary ingredient into the shelf-stable side of the pantry. By our assessment, the strength is obvious enough: canned mushrooms are ready to tip into sauces, casseroles, and quick weekday cooking without cleaning or slicing raw produce. The downside is the usual one for canned mushrooms, namely a softer texture and less of the fresh, earthy bite people want from the real thing. In practice they are a convenience ingredient, not a substitute for fresh mushrooms in dishes that depend on browning or firmness. Compared with fresh mushrooms, they are more about speed and storage than flavour, and the label tells you exactly how far to trust them.
