Rilettes de thon is a spread, not a neat fillet tin, so it belongs on crackers, toast, or a casual starter plate rather than in a recipe that wants clean pieces of fish. The mashed texture is its main advantage: it spreads easily and gives a more cohesive tuna bite than plain flakes. By our assessment, that same softness is also the limit, because it is less defined and less fresh-tasting than a simple tuna can. In practice it is one of those jars that disappears quickly once opened, which is the whole point of rillettes. Against standard tuna packs, it is more of a snack or spread; against classic pork or duck rillettes, it is a lighter seafood version. It stays in the middle ground between convenience and appetiser, with no reason to be more serious than that.
