Cooked whelks are for people who actually want to deal with shellfish rather than just look at them on a plate. By our assessment, their best point is the firm, briny chew and the clean sea flavor that comes through when they are cooked properly and not overworked. The downside is equally plain: whelks can be rubbery if the cooking is off, and they demand a bit more patience than softer seafood. In practice they are a hands-on product, usually needing picking, dipping, or a knife to get the meat out, so they are more work than fish fillets. They sit alongside mussels and clams in the colder, more old-fashioned part of seafood eating, but with a tougher bite. They suit people who enjoy shellfish texture and are happy with something a little rougher around the edges, and they do not suit anyone wanting neat, delicate seafood.
