Lemon Juice

Lemon Juice is all edge and no softness, which is exactly why it has a place in kitchens rather than as an everyday glass to sip. By our assessment, its strength is concentration: a little goes a long way in drinks, marinades, and cooking, where lemon brightness matters more than volume. The downside is that it is not meant to be pleasant on its own in the way sweeter juices are, so its usefulness depends on being mixed or cooked. In practice it is a sharp, practical bottle that changes other things more than it stands alone. Against fruit juices meant for direct drinking, it is less a beverage than an ingredient. Lemon Juice is for people who need acidity on hand, and the label tells the whole truth about that job. The name still does the work it is supposed to do.
