Madeleines Moelleuses

Madeleines Moelleuses are the small shell-shaped sponge cakes people reach for when they want something plain, buttery, and quick with coffee or tea. By our assessment, the best thing about them is the soft crumb and the tidy individual shape, which makes them easy to portion and easy to serve. The limit is that madeleines are not a very bold product: they can dry out if they sit too long, and they rely more on texture than on a strong flavour profile. In practice they feel old-fashioned in a good way, somewhere between a biscuit and a cake, and the catalogue simply places them in the madeleine category.
