Filets de maquereau is for people who want ready-to-eat mackerel with oil already doing part of the work. By our assessment, these fillets are strongest when used as a quick lunch, on bread, or folded into a salad where the oily fish can carry the rest of the plate. The good part is the rich, firm mackerel texture and the fact that oil keeps it moist and fairly forgiving. The downside is also the same oil: it makes the taste heavier and the tin less versatile than plain fish in water or brine. In practice it is straightforward pantry food, more about opening a tin than cooking a dish. Compared with plain sardines or tuna, it sits in the same practical corner but with a stronger, more distinctive flavor. Filets de maquereau works best when you already want mackerel, not when you are looking for a neutral fish base.
