Bâton surimi is the lunchbox fish stick of the seafood aisle, made for salads, cold platters, and quick snacking where imitation crab is the point. Its big advantage is texture: it is soft, lightly springy, and already portioned on a stick, so it is easy to handle without any cooking. By our assessment, the downside is equally plain, because surimi has a mild, processed flavor that never pretends to be real fish in the same way sardines or tuna do. In practice it is cool, convenient, and a little artificial, which is exactly why some people like it and others do not. Against canned fish it is less about briny depth and more about ready-made convenience; against fresh seafood it is obviously a cheap substitute. It works best when the recipe wants that mild seafood note and the stick format stays useful.
