Lait d'amande is almond milk for people who want a plant-based drink for cereal, coffee, or cooking instead of dairy. By our assessment, it works best as a light, nutty-tasting liquid with a smooth pour, and that makes it useful in drinks where heaviness would get in the way. The limit is built in: compared with dairy milk, it is thinner and usually much less rich, so it can feel more like a kitchen substitute than a food on its own. In practice the texture is clean and easy, but the flavour is delicate enough that it disappears fast under strong coffee or very sweet cereal. It sits in the middle of the plant-milk shelf, below oat milk for creaminess and above water for anything that wants some body. Lait d'amande is sensible when the goal is a lighter dairy alternative, especially if the slight almond note is welcome.
